I wonder how many people who work with hot oil end up with little burns all over their arms, it happens here too. Always good to see a slice of Mumbai life through your eyes Deepak.
That is how chips are made locally. In few years will we see them with the MNC chips slowly becoming "more popular?" Will this knowledge on how to make large quantities of chips remain with the common person? In btw what is that dark thing in his hand? The ladle I see is in the oil. What is this?
The chipser. The stuff is thinly grated right into the oil. Surprisingly, at one point, salt water is sprinkled with fingers on to the frying chips in the hot oil. Resulting in some agitated crackling. My very good friend makes her own chips , wafer thin and yummy , at home, and she explained this method. This could be a commercial large size chipser . The small version is used at home.

Nice hot fried chips. Actually these Barthans of oil have always scared me. What if it spills over? I have seen these experts slice raw bananas to make banana chips in Kerala. What precision. It is amazing to watch them. :)
I love these chips. I buy from Hot Chips in Bangalore. I especially like those thinker, crunchier variant. Have you tried karela chips? They are yummy!

DeleteThe guy toils hard for the whole day.The oil is used and reused a number of times and in the process the oil gets polymerized and is bad for health !
