These food stalls must be very beneficial for people who don't have much time, such as office workers on a short break. It appears this particular stall offers a wide variety of food choices, too.
I have a little story to share: 1993, Cairo, train to Alexandria left in the evening. The taxi driver I got in the morning (who helped me find out when the train leaves!) offered to take our belongings, drive us to a museum and pick us up at 4 in the afternoon. I agreed, he came back and amongst other went to the markets with us where we had the yummiest street food :-) I don´t know if these days I would just leave my belongings with a stranger, but I am very glad I did. Thank you for the memory.
